“Mắm Ruốc Me” – A specialty in the culinary culture of Phan Thiet – Binh Thuan, Vietnam

“Mắm ruốc me” translated into English means “Tamarind shrimp paste”. However, it is not a word that accurately represents this type of fish sauce.

Vietnam has many different types of fish sauce and shrimp paste is just one of many types of fish sauce and “mắm ruốc” here is not “shrimp paste”. “shrimp paste” in Vietnamese is “mắm tôm”, and it is not “mắm ruốc”.

“Mắm ruốc” made from “con ruốc”, it is a marine creature quite similar to shrimp but much smaller in size than shrimp.

In Vietnam, we call “con ruốc” with another name is “tép biển”.

From “con ruốc” through manual steps, the fishermen process it into “mắm ruốc”.

However, at this point, it only creates a raw “mắm ruốc” product, it needs to go through the processing stage to become a delicious and edible “mắm ruốc” that can be eaten. In Phan Thiet, people call it “Mắm ruốc me”.

The processing process will add some spices and sugar, especially sour tamarind (“me” in Vietnamese).

That’s why people call it “Mắm ruốc me”.

“Mam ruoc me” can be said to be a food that no one doesn’t like.

“Mam ruoc me” has existed for a long time in Phan Thiet in particular and Vietnam in general. From children to the elderly, everyone loves this dish.

“Mam ruoc me” is often eaten with grilled rice paper, ambarella, mango, guava and many other fruits.
In addition, “Mam ruoc me” is also used to eat with rice or prepare many other dishes such as braised meat, vermicelli noodles…
